IF you ever needed an excuse to try out the celebrated fare at Wynwood’s R House without having to shell out the big bucks, mark your calendars for June 14th. Slow Food Miami was created to support local communities “from the ground up”. The non-profit encourages sustainability by advocating healthy, locally grown foods and community initiatives. Their Slow Food restaurant series aims to bring much of that farm to table goodness by pairing with local chefs to showcase how home-grown, organic ingredients make for amazing culinary experiences.
R House will be hosting the first Snail Food social of the summer, and the menu, prepared by Chef Rocco Carulli, will feature a sampling of some time-tested favorites, curated for their flavor.
Attendees of the Snail Social can enjoy complimentary bites from Chef Rocco’s new summer menu, including a wide range of new dishes with a rustic Southern Italian and American farm-to-table flair. Selections will include:
● Ciabatta Crostini with Slow-Roasted Heirloom Tomatoes, House-Made Ricotta, Black Olive Tapenade
● Red Beet-Arugula Pesto Bites
● Mini Braised Short Rib and House-Made Ricotta Pizzas
● Grass-Fed Brisket and Short Rib Meatballs with Chef Rocco’s Heirloom Marinara
● Porcini Mushroom-Rubbed Braised Lamb Shank with Israeli Couscous
Drink specials at R House will include happy hour cocktails made using the restaurant’s famous infused liquors, which have undergone a month-long in-house infusion process using tropical fruits, fresh herbs and spices. Guests are invited to extend happy hour and take advantage of the exclusive Slow Food offer of 20% off dinner following the social.
For Chef Carulli, it’s all about flavor, not appearance or modernity, “Our entire menu is based on the use of good, clean ingredients which we take our time to combine without adulterating the base ingredients or overly stylizing them. We do not follow here-today, gone-tomorrow cooking fads or trends, but instead, focus on flavor.”
The event is part of an ongoing series of Snail Food socials, taking place on the second Tuesday of each. Each social will feature a selected chefs and will take place at a different restaurant to showcase the best in the world of “snail food” in Miami.
